Step by Step Method

Step 1

Heat a heavy-bottomed pot over medium-low heat

Step 2

Add the oil, followed by the onions, garlic, and chilies.

Step 3

Sweat until the onions are translucent, about 10 minutes.

Step 4

Add the cumin and curry

Step 5

And cook until fragrant, about 1 minute or so.

Step 6

Add chili flakes

Step 7

Add the chopped tomatoes,stock, salt and season with pepper to taste and bring to a simmer.

Step 8

Once simmering

Step 9

Add the lentils and continue to simmer for approximately about 40 minutes or until the lentils are fully cooked through. 

Step 10

Add more water if to thick

Step 11

Garnish with cilantro and lemon
