Step 1: Heat a heavy-bottomed pot over medium-low heat
Step 2: Add the oil, followed by the onions, garlic, and chilies.
Step 3: Sweat until the onions are translucent, about 10 minutes.
Step 4: Add the cumin and curry
Step 5: And cook until fragrant, about 1 minute or so.
Step 6: Add chili flakes
Step 7: Add the chopped tomatoes,stock, salt and season with pepper to taste and bring to a simmer.
Step 8: Once simmering
Step 9: Add the lentils and continue to simmer for approximately about 40 minutes or until the lentils are fully cooked through.
Step 10: Add more water if to thick
Step 11: Garnish with cilantro and lemon
