Ingredients

The ingredients are:
  • 1 cup red onion, finely diced
  • 3 cloves garlic, minced
  • 2 green chilies, minced
  • 1/2 teaspoon curry powder,to taste
  • 1/2 teaspoons cumin
  • 2 cans (58 ounces)whole tomatoes,(28 ounces each),crushed
  • 6 ounces red lentils,(1 cup)
  • 2 cups vegetable stock
  • 1 tablespoons coconut oil
  • 1 teaspoons sea salt
  • 1/4 teaspoons freshly ground black pepper, to taste
  • 1/4 cup fresh cilantro,minced
  • 1 lemon,cut in 8ths, for garnish
  • 1 teaspoons red chili flakes,to taste

How to Make

  • Step 1: Heat a heavy-bottomed pot over medium-low heat

  • Step 2: Add the oil, followed by the onions, garlic, and chilies.

  • Step 3: Sweat until the onions are translucent, about 10 minutes.

  • Step 4: Add the cumin and curry

  • Step 5: And cook until fragrant, about 1 minute or so.

  • Step 6: Add chili flakes

  • Step 7: Add the chopped tomatoes,stock, salt and season with pepper to taste and bring to a simmer.

  • Step 8: Once simmering

  • Step 9: Add the lentils and continue to simmer for approximately about 40 minutes or until the lentils are fully cooked through. 

  • Step 10: Add more water if to thick

  • Step 11: Garnish with cilantro and lemon
