Step by Step Method
Step 1
Cream butter and sugar together in a small bowl until pale yellow and fluffy.
Step 2
Beat in egg, then juices and peels.
Step 3
Combine dry ingredients (not coconut yet), gradually add to butter mixture. Mix well.
Step 4
Beat in coconut.
Step 5
Drop by rounded teaspoons onto greased cookie sheets, about 2 inches apart.
Step 6
Bake at 350ºF for 10-12 minutes until edges are slightly browned.
Step 7
Cool on sheet for one minute, then remove to wire rack to cool.
Step 8
While cookies cook, beat icing ingredients until smooth. Spread over cookies. Let stand until set before storing.
