  • 1 3/4 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup flaked coconut
  • FOR ICING
  • 1 1/3 cups confectioners' sugar
  • 5 teaspoons orange juice
  • 1 teaspoon lemon juice
  • 1/2 teaspoon grated orange peel
  • 1 drop yellow food coloring (optional)

How to Make

  • Step 1: Cream butter and sugar together in a small bowl until pale yellow and fluffy.

  • Step 2: Beat in egg, then juices and peels.

  • Step 3: Combine dry ingredients (not coconut yet), gradually add to butter mixture. Mix well.

  • Step 4: Beat in coconut.

  • Step 5: Drop by rounded teaspoons onto greased cookie sheets, about 2 inches apart.

  • Step 6: Bake at 350ºF for 10-12 minutes until edges are slightly browned.

  • Step 7: Cool on sheet for one minute, then remove to wire rack to cool.

  • Step 8: While cookies cook, beat icing ingredients until smooth. Spread over cookies. Let stand until set before storing.
