"Found this in a library book - Taste of Home Holidays 2008. I love the combination of orange and coconut (reminds me of Florida) and I thought I'd post here for safekeeping!"
Cream butter and sugar together in a small bowl until pale yellow and fluffy.
Beat in egg, then juices and peels.
Combine dry ingredients (not coconut yet), gradually add to butter mixture. Mix well.
Beat in coconut.
Drop by rounded teaspoons onto greased cookie sheets, about 2 inches apart.
Bake at 350ºF for 10-12 minutes until edges are slightly browned.
Cool on sheet for one minute, then remove to wire rack to cool.
While cookies cook, beat icing ingredients until smooth. Spread over cookies. Let stand until set before storing.
