"If you’re a cinnamon lover, (and I’m a cinnamon nut), these are really good. Triple cinnamon because they contain cinnamon, cinnamon chips and cinnamon extract. The extract is necessary for a deep cinnamon flavor that can’t be reproduced any other way."

Step by Step Method

Step 1

Preheat oven to 325° F. Lightly grease a 9 x 13 inch pan with cooking spray or line with parchment paper.

Step 2

In a large mixing bowl beat together the butter, brown sugar, and sugar until smooth and light, about 5 minutes.

Step 3

Add the eggs one at a time, mixing after each addition. Add the cinnamon and extracts.

Step 4

In a separate bowl combine the dry ingredients: salt, baking soda, flour and oats.

Step 5

Add dry ingredients to the creamed mixture and stir until just combined. Fold in the cinnamon chips.

Step 6

Press into the prepared pan (the dough will be sticky and dense) and sprinkle toffee bits on top and press into the dough a little.

Step 7

Bake for 25 to 27 minutes or until just golden brown. Be careful not to over bake. Allow to cool completely before cutting.
