Ingredients

The ingredients are:
  • 1 cup butter, room temperature (2 sticks)
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 1/2 teaspoons cinnamon
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 cups all purpose flour
  • 2 cups quick oats (you can make quick oats by pulsing rolled oats in a food processor for a few seconds)
  • 1 cup cinnamon chips
  • 1/2 cup toffee bits

How to Make

  • Step 1: Preheat oven to 325° F. Lightly grease a 9 x 13 inch pan with cooking spray or line with parchment paper.

  • Step 2: In a large mixing bowl beat together the butter, brown sugar, and sugar until smooth and light, about 5 minutes.

  • Step 3: Add the eggs one at a time, mixing after each addition. Add the cinnamon and extracts.

  • Step 4: In a separate bowl combine the dry ingredients: salt, baking soda, flour and oats.

  • Step 5: Add dry ingredients to the creamed mixture and stir until just combined. Fold in the cinnamon chips and toffee bits.

  • Step 6: Press into the prepared pan (the dough will be sticky and dense)

  • Step 7: Bake for 25 to 28 minutes or until golden brown and the edges are slightly crisp. Allow to cool completely before cutting.
