Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

Grease and flour 2 (9 inch) round cake pans.

Step 3

Sift together flour, sugar, baking soda and salt. Set aside.

Step 4

In a large bowl combine the oil, eggs, pineapple, bananas and 1 cup of chopped pecans. Add flour mixture, and mix together by hand.

Step 5

Pour batter, dividing between the two pans.

Step 6

Bake for 1 hour, or until a toothpick inserted in the center comes out clean. Remove from oven, and cool on racks.

Step 7

Prepare the frosting by blending together the cream cheese, butter, sugar and vanilla until smooth.

Step 8

Frost cake, then sprinkle top of cake with 1/2 cup of pecans.

I have only ever made this cake once before, and have been wanting to try this particular cake once again for so long. I am so pleased I finally made this once again and just as pleased that I used this recipe. I was a little worried about the amount of oil used, but it was fine, the cake turned out so moist, and had just such a wonderful texture and flavor. I did use walnuts, as I could not find any pecans in the supermarket ~ and the walnuts seemed to also work so well in this cake. The icing is a must, working well with the flavors and complimenting the cake so perfectly. Everyone loved this cake, and I will be surely making this again.

If you are from the south, then you have probably had Hummingbird cake, but you most likely haven't had this one! It is extremely moist and the flavor is pure sweetness from heaven!

Cakes are not my specialty, so when I make one I never know how it is going to come out, but this one was so moist and loved the crunch of the pecans and it tasted out of this world good!

If I could give this more than five stars I would. This cake is so moist and delicious, that I found it hard not to go back immediately for a second piece! My family loves it and I have been told that it will be made for the next birthday in the family to have with ice cream. You won't hear a complaint on that choice!
