Step by Step Method

Step 1

Bring 6 cups of water to a boil. Reduce to a simmer and add 2 tablespoons of vinegar.

Step 2

Meanwhile, in a small bowl, mix the cilantro, lime juice, and olive oil. Season to taste with salt and pepper. Set aside.

Step 3

Using a skillet, melt the butter over medium heat. Once the butter has melted, add the tortillas and toast them until they are light golden brown and crispy on both sides. Remove the tortillas from the skillet and place them on a paper towel.

Step 4

In the same skillet, cook the chorizo sausage on medium heat until browned. Remove from heat and set aside.

Step 5

Layer the guacamole, chorizo sausage, pinto beans and tomato salsa onto the tortillas.

Step 6

Poach the eggs in the simmering vinegar water for approximately 3-4 minutes. Remove them with a slotted spoon and place them on top of the layered ingredients.

Step 7

Stir the cilantro & lime juice mixture, then spoon a small amount over the eggs. Serve immediately.

  • Look for fresh, ripe avocados for the guacamole to ensure the best flavor.
  • Make sure to use a good quality chorizo sausage for the best flavor.

  • Substitute olive oil for avocado oil - Avocado oil is a healthier oil option that is high in monounsaturated fatty acids and has a higher smoke point than olive oil, making it a better choice for cooking at higher temperatures.
  • Substitute chorizo sausage for chorizo crumbles - Chorizo crumbles are a great alternative to sausage as they are lower in fat and calories, making them a healthier option. Plus, they are easier to cook and can be added directly to the skillet without having to be cooked first.

Vegetarian Huevos Rancheros Benedict Replace the chorizo sausage with a vegetarian alternative, such as seitan, tempeh, or tofu. Use a vegetable oil instead of butter when toasting the tortillas. Use a vegetarian-friendly tomato salsa. Finally, replace the eggs with tofu scramble.

Vegetarian Huevos Rancheros Burrito Replace the chorizo sausage with a vegetarian alternative, such as seitan, tempeh, or tofu. Use a vegetable oil instead of butter when sautéing the vegetables. Assemble the burrito by layering a warm flour tortilla with the sautéed vegetables, the vegetarian sausage, and a vegan cheese. Top with a vegan sour cream, salsa, and a sprinkle of cilantro.

Mexican Street Corn: A delicious side dish of grilled corn on the cob, slathered in a creamy, spicy sauce and finished with a sprinkle of Cotija cheese.

Black Bean and Rice Burrito Bowls: A hearty and flavorful burrito bowl made with black beans, brown rice, and your favorite Mexican toppings. This dish is a great accompaniment to Mexican Street Corn, as it provides a balance of flavors and textures.
