Ingredients

The ingredients are:
  • 6 cups water
  • 2 tablespoons vinegar
  • 1 cup cilantro leaves, chopped and loosely packed
  • 2 tablespoons lime juice
  • 2 teaspoons oil (olive oil)
  • 2 teaspoons butter
  • 2 corn tortillas (fresh 4")
  • 4 ounces chorizo (sausage)
  • Guacamole (2 tablespoons)
  • 2 ounces cooked pinto beans
  • 1/2 cup tomato salsa
  • 2 large eggs

How to Make

  • Step 1: Bring 6 cups of water to a boil. Reduce to a simmer and add 2 tablespoons of vinegar.

  • Step 2: Meanwhile, in a small bowl, mix the cilantro, lime juice, and olive oil. Season to taste with salt and pepper. Set aside.

  • Step 3: Using a skillet, melt the butter over medium heat. Once the butter has melted, add the tortillas and toast them until they are light golden brown and crispy on both sides. Remove the tortillas from the skillet and place them on a paper towel.

  • Step 4: In the same skillet, cook the chorizo sausage on medium heat until browned. Remove from heat and set aside.

  • Step 5: Layer the guacamole, chorizo sausage, pinto beans and tomato salsa onto the tortillas.

  • Step 6: Poach the eggs in the simmering vinegar water for approximately 3-4 minutes. Remove them with a slotted spoon and place them on top of the layered ingredients.

  • Step 7: Stir the cilantro & lime juice mixture, then spoon a small amount over the eggs. Serve immediately.
