Step by Step Method
Step 1
Using a Heavy saucepan, melt butter
Step 2
Add in flour, stirring with a wire whisk. Cook and stir about 2 minutes.

Remove from heat and add in milk and wine.
Step 4
Heat again till sauce boils and thickens.
Step 5
Add cream and cheese, stirring gently till cheese is melted (do not boil).
Step 6
Season to taste with salt, pepper and nutmeg.
