Step 1: Using a Heavy saucepan, melt butter
Step 2: Add in flour, stirring with a wire whisk. Cook and stir about 2 minutes.
Step 3: Remove from heat and add in milk and wine.
Step 4: Heat again till sauce boils and thickens.
Step 5: Add cream and cheese, stirring gently till cheese is melted (do not boil).
Step 6: Season to taste with salt, pepper and nutmeg.
