Step by Step Method
Step 1
Chop chocolate roughly then pulse in food processor until like breadcrumbs.
Step 2
Boil the cream. Turn on food processor and very slowly add cream TIL it gets smooth and emulsified. If it breaks just process a little longer.
Step 3
Add butter bit by bit and beat until it’s. Incorporated.
Step 4
Pour into pan or bowl and leave to cool in fridge until the consistency of butter icing. About 30 minutes
Step 5
Spoon or pipe into bite size shapes. Then cool for at least two hours before rolling in cocoa powder if you choose.
