Step by Step Method
Step 1
Using the paddle attachment of a stand mixer, whip the heavy cream with salt on high for several minutes or until you hear the sound of the motor change. The solids will have collected together and color will be pale yellow. In the bowl you should see gobs of butter floating in liquid buttermilk). Pour off the buttermilk liquid.
Step 2
Using your hands squeeze out the buttermilk liquid from the butter.
Step 3
Rinse the the butter under cold water until it runs clear.
Step 4
Shape into whatever shape you want.
Step 5
Place in a glass bowl. Cover and refrigerate.
