Step by Step Method
Step 1
Beat egg yolks until light and fluffy; beat in gradually (on low speed so it doesn't fly everywhere) the powdered sugar. Add very slowly, beating constantly, cream and milk.
Step 2
In a separate bowl, whip egg whites and salt until stiff. Fold lightly into the other ingredients. Serve sprinkled with fresh grated nutmeg.
