  • 12 egg yolks**
  • 1 lb powdered sugar
  • 2 quarts 1/2 & 1/2 cream
  • 1 quart whole milk
  • 6 egg whites**
  • 1/2 tsp salt
  • Fresh grated nutmeg

How to Make

  • Step 1: Beat egg yolks until light and fluffy; beat in gradually (on low speed so it doesn't fly everywhere) the powdered sugar. Add very slowly, beating constantly, cream and milk.

  • Step 2: In a separate bowl, whip egg whites and salt until stiff. Fold lightly into the other ingredients. Serve sprinkled with fresh grated nutmeg.

  • Step 3: **For safety purposes, use pasteurized eggs. You can usually find them at your better grocery stores.
