Step by Step Method

Step 1

Heat oven to 350 degrees.

Step 2

Grease a 9x5 inch loaf pan; set aside.

Step 3

In a large mixing bowl, combine the sugar, orange peel, orange juice, water, oil, and egg; mix well.

Step 4

Add the flour, salt, baking powder and baking soda; stir and mix until moistened.

Step 5

Stir in the cranberries and nuts.

Step 6

Pour into prepared loaf pan.

Step 7

Bake at 350 degrees for 50 to 60 minutes or until toothpick inserted in center comes out clean.

Step 8

Cool 10 minutes and remove bread from pan to a wire rack.

Step 9

Cool completely. Wrap tightly with clear wrap and store in an air tight conatiner in the refrigerator.

Very flavorful and moist. I used some chopped cranberries left over from the relish I made for Thanksgiving, but will make it with whole berries next time.
