"I saw this recipe on and episode of Nigella Express on the food Network Channel. It reminded me of a sweet treat I used to love as a kid called sponge toffee. This recipe is just like that sponge toffee I loved so much."

Step by Step Method

Step 1

Stir sugar and syrup together in a cold pan.

Step 2

Put over medium-high heat; from this point, do NOT stir, but only swirl the pan.

Step 3

Cook until golden and thick and bubbles are beginning to mount.

Step 4

Turn off heat and add baking soda.

Step 5

Whisk vigorously.

Step 6

Pour onto a cookie sheet and let stand 15 minutes.

Step 7

Smash into large pieces.

This is delicious I made it for my husband and topped it with melted chocolate. It's kind of like a crunchy bar in the UK.
