Step 1: Stir sugar and syrup together in a cold pan.
Step 2: Put over medium-high heat; from this point, do NOT stir, but only swirl the pan.
Step 3: Cook until golden and thick and bubbles are beginning to mount.
Step 4: Turn off heat and add baking soda.
Step 5: Whisk vigorously.
Step 6: Pour onto a cookie sheet and let stand 15 minutes.
Step 7: Smash into large pieces.
