Step 1

Pre-heat oven 400f

Step 2

In a zip lock bag toss the potatoes with the oil, thyme, garlic and pepper flakes

Step 3

Place the potatoes single layer in an oven proof dish, bake for 45 minutes or until tender. Flip them half way through baking.

Step 4

Decorate with thyme sprigs. Serve hot

A perfect way to serve sweet potato/yams !! wonderful flavour, thanks for posting, i will be making these again often.  Next time i will slice them thicker, they were delicious but cooked in half the time suggested, and i'm sure would have been even better had i sliced them thicker.
