"I adapted this tasty recipe from the Hodgson Mill product site. I changed it up to make it a tad more healthy. I'm really happy how these nutty morsels turned out, so I wanted to share them with you."

Step by Step Method

Step 1

In a small bowl stir together dry ingredients.

Step 2

In a medium bowl, blend wet ingredients.

Step 3

Add dry ingredients to egg mixture and stir until just blended.

Step 4

Fold in apples and nuts.

Step 5

Divide batter between well greased muffin tins.

Step 6

Bake at 400 degrees for 18-20 minutes or until top springs back.

We enjoyed these muffins, skipping the nuts, but otherwise made as directed. We made 18 muffins with this recipe, so were able to also freeze some for another day. Thanks for sharing!

Mmmmmmm.... these are really yummy muffins. I made these this morning for a brunch, and they are so good. Moist, not overly sweet, and so full of good-for-you stuff. Even people who aren't used to "healthy" muffins would love these. Thanks for sharing!
