Step by Step Method
Step 1
PreHeat oven to 350 degrees F.
Step 2
Heat oil in large skillet over medium-high.
Step 3
Add onion and saute until softened, season lightly.
Step 4
Add beef and saute until nearly cooked through, drain if needed.
Step 5
Add bell pepper and celery cook until softened.
Step 6
Add tomato soup, tomatoes, salt and pepper; reduce heat and simmer, covered for 10 minutes, until vegetables are tender.
Step 7
Combine sauce and rice in a Pam sprayed casserole dish or baking pan.
Step 8
Bake 30 minutes covered.
Step 9
Top with cheese bake uncovered for 10 minutes more, until cheese melts.
