Ham & Cheese Mini Quiches
"This is a similar recipe to what I already have on this site, "Ham and Corn Cases" which is a DH favorite and also so great to use up any leftover bread. My DH loves these for a late breakfast of early brunch...... same thing really! So when I found this recipe, I knew I just had to try this version, so I have posted this recipe from "Aussie Western Star Butter" to try it. These gems are also great for parties for kids and adults alike."

Step by Step Method
Step 1
Preheat the oven to 180°C
Step 2
Using a rolling pin; lightly roll slices of bread and flatten until thin.
Step 3
Butter the slices of bread on one slide & place the slices in a muffin tin, butter side down in order to create a case.
Step 4
Transfer muffin tin into the oven and bake approx; for 6 minutes.
Step 5
Remove the tin from the oven and reduce the temperature to 160°C
Step 6
Meanwhile, place the cheese, ham, spring onions and eggs in a large bowl & season with salt and pepper; mix well to combine
Step 7
Pour the mixture carefully into the toasted cases, and return to the oven to bake for a further 15-20 minutes or until set and lightly golden.
Step 8
Remove from the oven and allow to stand for 5 minutes, before carefully removing from the tin.
Step 9
Sprinkle with snipped chives and serve warm or at room temperature
