Step by Step Method
Step 1
Preheat oven to 425 degrees F.
Step 2
In a 10 inch tart pan, place premade pie crust in, pressing up the sides. Bake for 10-15 minutes until golden brown.
Step 3
To make the tart filling: in a bowl mix together the mascarpone cheese and the next 5 ingredients (tarragon - pepper).
Step 4
Slice each asparagus spear into 4 or 5 pieces and drop into a pan of salted boiling water. Cook 3-5 minutes; drain. Cool in bowl of ice water; drain.
Step 5
Toss the asparagus in a medium bowl with the arugula and the ham, lemon juice and peel ans alt and pepper.
Step 6
To make the tart: spread the mascarpone mixture onto the cooled crust; top with aspargus/ ham mixture and serve.
