"This is a great starter, finger food or appetizer to serve. These little morsels are superb served with a glass of sparkling, the Gruyère pairs so well with the sparkling ~ It's like a match made in heaven Note: I usually place the cheese balls into the fridge for 10 minutes just before frying."

Step by Step Method
Oil will need to be heated in a pan.
Remove the rind from the Gruyère & grate the cheese finely.
Melt the butter in a small pan over a low heat.
Using a small bowl, mix together the fresh breadcrumbs, melted butter, grated cheese, 2 of the eggs and seasonings to taste; mix well with a fork.
Form mix into small ball (about the size of a walnut).
Slightly beat the remaining egg and coat the balls in the egg mix and then coat with the dried breadcrumbs.
Fry the croquettes in oil a few at a time, turning them well, until they are golden brown ~ this should only take a few minutes or more.
Remove the croquettes with a slotted spoon and place on paper towel to absorb the excess oil.
