Step by Step Method
Step 1
Oil will need to be heated in a pan.
Step 2
Remove the rind from the Gruyère & grate the cheese finely.
Step 3
Melt the butter in a small pan over a low heat.
Step 4
Using a small bowl, mix together the fresh breadcrumbs, melted butter, grated cheese, 2 of the eggs and seasonings to taste; mix well with a fork.
Step 5
Form mix into small ball (about the size of a walnut).
Step 6
Slightly beat the remaining egg and coat the balls in the egg mix and then coat with the dried breadcrumbs.
Step 7
Fry the croquettes in oil a few at a time, turning them well, until they are golden brown ~ this should only take a few minutes or more.
Step 8
Remove the croquettes with a slotted spoon and place on paper towel to absorb the excess oil.
Step 9
Serve hot.
