Ingredients

The ingredients are:
  • 225 grams gruyère cheese ( 8 oz or 1/2 pound)
  • 40 grams butter ( 1 & 1/2 oz or 3 tablespoons)
  • 100 grams breadcrumbs, fresh ( 4 oz or 2 cups)
  • 3 eggs
  • Salt and pepper to taste
  • 50 grams breadcrumbs, dried ( 2 oz or 3/4 cup)
  • Oil for frying

How to Make

  • Step 1: Oil will need to be heated in a pan.

  • Step 2: Remove the rind from the Gruyère & grate the cheese finely.

  • Step 3: Melt the butter in a small pan over a low heat.

  • Step 4: Using a small bowl, mix together the fresh breadcrumbs, melted butter, grated cheese, 2 of the eggs and seasonings to taste; mix well with a fork.

  • Step 5: Form mix into small ball (about the size of a walnut).

  • Step 6: Slightly beat the remaining egg and coat the balls in the egg mix and then coat with the dried breadcrumbs.

  • Step 7: Fry the croquettes in oil a few at a time, turning them well, until they are golden brown ~ this should only take a few minutes or more.

  • Step 8: Remove the croquettes with a slotted spoon and place on paper towel to absorb the excess oil.

  • Step 9: Serve hot.
