Step by Step Method
Step 1
Preheat the oven to 350°F (180°C).

In a large skillet, heat a drizzle of olive oil over medium heat. Add the onion, green bell pepper, and garlic, and cook until they are tender and slightly golden.

Add the ground beef to the skillet and cook until it is well browned and crumbled. Season with salt and pepper to taste.

Add the tomato sauce and red enchilada sauce to the skillet. Mix all the ingredients well and cook over medium heat for 5 minutes to allow the flavors to blend.

Stir in the chili beans and diced tomatoes. Cook for another 5 minutes, stirring occasionally.

In a baking dish or large tray, spread out the corn chips evenly. Pour the ground beef mixture over the chips, spreading it out to cover them.

Sprinkle the shredded cheddar cheese over the top of the ground beef mixture.

Place the baking dish or tray in the preheated oven and bake for about 10 minutes, or until the cheese has melted and started to bubble.

Remove from the oven and let it cool for a few minutes. Serve the nachos hot and garnish with optional toppings such as sour cream, diced tomatoes, chopped green onions, or sliced jalapeños, according to your preference.
