Ingredients

The ingredients are:
  • 1 pound ground beef
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves of garlic, minced
  • 8 ounces can of tomato sauce
  • 10 ounces of red enchilada sauce
  • 15 ounces chili beans
  • 15 ounces of diced tomatoes
  • 1 large bag of corn chips or tortilla chips
  • 4 cups of shredded cheddar cheese (or your favorite cheese)
  • Salt and pepper to taste
  • Optional toppings:
  • Sour cream
  • Diced tomatoes
  • Chopped green onions
  • Sliced jalapeños

How to Make

  • Step 1: Preheat the oven to 350°F (180°C).

  • Step 2: In a large skillet, heat a drizzle of olive oil over medium heat. Add the onion, green bell pepper, and garlic, and cook until they are tender and slightly golden.

  • Step 3: Add the ground beef to the skillet and cook until it is well browned and crumbled. Season with salt and pepper to taste.

  • Step 4: Add the tomato sauce and red enchilada sauce to the skillet. Mix all the ingredients well and cook over medium heat for 5 minutes to allow the flavors to blend.

  • Step 5: Stir in the chili beans and diced tomatoes. Cook for another 5 minutes, stirring occasionally.

  • Step 6: In a baking dish or large tray, spread out the corn chips evenly. Pour the ground beef mixture over the chips, spreading it out to cover them.

  • Step 7: Sprinkle the shredded cheddar cheese over the top of the ground beef mixture.

  • Step 8: Place the baking dish or tray in the preheated oven and bake for about 10 minutes, or until the cheese has melted and started to bubble.

  • Step 9: Remove from the oven and let it cool for a few minutes. Serve the nachos hot and garnish with optional toppings such as sour cream, diced tomatoes, chopped green onions, or sliced jalapeños, according to your preference.
