Step 1: Preheat the oven to 350°F (180°C).
Step 2: In a large skillet, heat a drizzle of olive oil over medium heat. Add the onion, green bell pepper, and garlic, and cook until they are tender and slightly golden.
Step 3: Add the ground beef to the skillet and cook until it is well browned and crumbled. Season with salt and pepper to taste.
Step 4: Add the tomato sauce and red enchilada sauce to the skillet. Mix all the ingredients well and cook over medium heat for 5 minutes to allow the flavors to blend.
Step 5: Stir in the chili beans and diced tomatoes. Cook for another 5 minutes, stirring occasionally.
Step 6: In a baking dish or large tray, spread out the corn chips evenly. Pour the ground beef mixture over the chips, spreading it out to cover them.
Step 7: Sprinkle the shredded cheddar cheese over the top of the ground beef mixture.
Step 8: Place the baking dish or tray in the preheated oven and bake for about 10 minutes, or until the cheese has melted and started to bubble.
Step 9: Remove from the oven and let it cool for a few minutes. Serve the nachos hot and garnish with optional toppings such as sour cream, diced tomatoes, chopped green onions, or sliced jalapeños, according to your preference.
