Step by Step Method
Step 1
Melt the butter with the oil in a dutch oven or heavy bottom pot over medium high heat; stir in the basil, oregano and thyme and cook for 1 minute to release their aroma.
Step 2
Add the diced fresh tomatoes, carrot, celery and onion and cook until onion has softened and the diced tomato has released it’s juices.
Step 3
Stir in the salt and pepper and add the ground beef; cook until the beef is browned.
Step 4
Add the beef broth and tomato juice and bring to a boil; reduce heat to medium low and simmer uncovered for 1 hour.
Step 5
Taste the soup and adjust seasoning if need be.
Step 6
Bring the heat up to medium high and when you have a low boil, add the tortellini and parsley. If you are using fresh tortellini let it cook until just softened, about 5 minutes. If you are using frozen tortellini, let it cook until just softened, about ten minutes.
Step 7
Ladle into bowls and Enjoy!
