Ingredients

The ingredients are:
  • 1/2 pound ripe fresh tomato, diced small
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1/2 yellow onion, diced
  • 2 tablespoons avocado oil
  • 1 tablespoon butter
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound medium ground beef
  • 4 cups good quality beef broth
  • 1 cup tomato juice
  • 150 grams cheese tortellini
  • 1 tablespoon chopped fresh parsley

How to Make

  • Step 1: Melt the butter with the oil in a dutch oven or heavy bottom pot over medium high heat; stir in the basil, oregano and thyme and cook for 1 minute to release their aroma.

  • Step 2: Add the diced fresh tomatoes, carrot, celery and onion and cook until onion has softened and the diced tomato has released it’s juices.

  • Step 3: Stir in the salt and pepper and add the ground beef; cook until the beef is browned.

  • Step 4: Add the beef broth and tomato juice and bring to a boil; reduce heat to medium low and simmer uncovered for 1 hour.

  • Step 5: Taste the soup and adjust seasoning if need be.

  • Step 6: Bring the heat up to medium high and when you have a low boil, add the tortellini and parsley. If you are using fresh tortellini let it cook until just softened, about 5 minutes. If you are using frozen tortellini, let it cook until just softened, about ten minutes.

  • Step 7: Ladle into bowls and Enjoy!
