Ingredients

The ingredients are:
  • 1/2 cup olive oil
  • 1 1/2 tablespoons thyme, chopped
  • 2 pounds sweet potatoes (I used three sweet potatoes, peeled and cut into 1/2 inch thick rounds)
  • 1 yellow onion (cut into 1/2 inch thick wedges)
  • 1 red bell pepper (cut into thick strips)
  • 2 tablespoons apple cider vinegar

How to Make

  • Step 1: Prepare grill (medium heat).

  • Step 2: In a small cup or bowl whisk together the oil and thyme.

  • Step 3: In a large bowl toss the vegetables (sweet potatoes - bell pepper). Drizzle with 1/4 cup of the oil mixture and toss.

  • Step 4: Grill vegetables until tender, turning often (15-20 minutes) - the peppers and onions cook faster than the potatoes. A grill basket works well for this recipe.

  • Step 5: Whisk vinegar into remaining oil mixture; season to taste.

  • Step 6: Drizzle mixture over the vegetables.
