Grilled Spicy Curry Pork Chops with Mango

"Perfect for the Summer grilling season. So easy to make, simply add the spice rubbed chops to a ziploc bag; marinate, and grill. You can really serve this with just about anything. But, since you are on the grill. How about grilling romaine for a salad; and some zucchini, and summer squash. I found this recipe from a flyer I picked up at a BBQ festival last year - It is delicious! I served it the first time with a mango chutney which was excellent. The second time ... I topped the chop, or served on the side - grilled mango slices brushed with a little honey which is by far my favorite way of serving these. I would think that peaches would also work very well, if mango is not available. Prep time does not include marinating time."

Step by Step Method

Step 1

Chops ... I find the easiest way to do this is between 2 pieces of plastic wrap; or, a ziploc bag works well. Now, you want the bone in for flavor; but, be careful when pounding - you don't want it to be too thin. A meat mallet really works best for this. I like it to be about 3/8" thick, or the thickness of a thin chop you would purchase at the grocery store. The thickness is really up to you.

Step 2

Spice Rub and Chops ... Add all the ingredients to a small bowl and mix well. Then, drizzle or spray the chops with a small amount of olive oil; add half of the spice mix, and rub into the chops. Flip the chops over, and repeat. Add to a ziploc bag or small dish covered with plastic wrap. Marinate 1 hour, or all day.

Step 3

Grill ... I like the smoky flavor of the outside grill, but a grill pan also works very well. Don't forget to take your chops out of the refrigerator to take the chill off. Then, cook 3-5 minutes per side until tender and juicy on a medium high heat grill. You want some good grill marks; so, don't move them around to much. Depending on the thickness and cooking methods, the cooking time can vary. This is an approximate cooking time. Remove the chops to rest and cover with foil.

Step 4

Mango ... If you decide to serve the mango; simply brush with a little honey (warmed up in the microwave, so it is easy to brush on the fruit); and season with a pinch of salt. Grill a couple of minutes per side until you get some nice grill marks. You are not cooking the mango until it is soft; just heating it up and getting some good flavor on it. Again, this is optional, but very good.

Step 5

Serve and ENJOY! Nothing more to say, grill and dig in. Very simple and healthy. Grilled potato wedges and a crisp salad would be a great to serve on the side.
