Step by Step Method
Step 1
In a small saucepan, heat brown sugar and water over medium heat until sugar is dissolved. Remove from heat.

Stir balsamic vinegar, lime juice, and 1/2 cup basil into the sauce, let sit at least 20 minutes
Step 3
Cut each peach into 4 to 6 lengthwise planks. Leave on the skin and removing the pit.
Step 4
Brush peaches with olive oil
Step 5
Grill peaches over medium heat until charred and softened, about 5 minutes
Step 6
Cut mozzarella into thick slabs and season lightly with salt and pepper
Step 7
Arrange caprese stacks by layering a slice of peach, a few leaves of basil, a slab of mozzarella, and another peach.
Step 8
Secure with a toothpick
Step 9
Strain basil leaves from the sauce and lightly drizzle over caprese stacks.
