Ingredients

The ingredients are:
  • 1/4 cup brown sugar
  • 2 tablespoons water
  • 1 teaspoon balsamic vinegar
  • 1/4 cup lime juice
  • 1 cup basil, loosely packed and divided
  • 520 grams peaches (3 peaches)
  • 2 tablespoons olive oil
  • 125 grams mozzarella cheese (1 large ball)
  • Salt and pepper, to taste

How to Make

  • Step 1: In a small saucepan, heat brown sugar and water over medium heat until sugar is dissolved. Remove from heat.

  • Step 2: Stir balsamic vinegar, lime juice, and 1/2 cup basil into the sauce, let sit at least 20 minutes

  • Step 3: Cut each peach into 4 to 6 lengthwise planks. Leave on the skin and removing the pit.

  • Step 4: Brush peaches with olive oil

  • Step 5: Grill peaches over medium heat until charred and softened, about 5 minutes

  • Step 6: Cut mozzarella into thick slabs and season lightly with salt and pepper

  • Step 7: Arrange caprese stacks by layering a slice of peach, a few leaves of basil, a slab of mozzarella, and another peach.

  • Step 8: Secure with a toothpick

  • Step 9: Strain basil leaves from the sauce and lightly drizzle over caprese stacks.
