Step by Step Method

Step 1

Prepare gill for medium-low heat.

Step 2

In a saucepan over medium-low heat cook the first three ingredients (-butter) plus 1/4 cup oil for 7-10 minutes or until nuts are golden brown, stirring often. Remove from heat and stir in the paprika, brown sugar, 1/2 teaspoon kosher salt and 1 teaspoon pepper. Grate the garlic and add in, stir to combine. Set aside.

Step 3

Place the leeks in a bowl and toss with 3 tablespoons oil and 1 teaspoon kosher salt; season with pepper.

Step 4

Arrange leeks, cut side down, on grate. Cover and grill for 10-15 minutes (undisturbed) until charred underneath, using tongs turn leeks over and cover grill and grill for another 10-15 minutes or until charred and soft inside.

Step 5

Transfer leeks to platter and drizzle vinegar over top and then top with the sauce and nuts.

The flavor on this is really good. I had to substitute with macadamia nuts due to not finding the other at the store. I also had to put in the oven, so I can't attest to the grill time. I do think it would have worked better unsliced.

Very interesting! It was a lovely change having the leeks grilled. The red wine vinegar finish with the hazelnut topping were wonderful together. Never had anything like this before, so thank you Ellie! Made for Billboard Recipe Tag.
