Ingredients

The ingredients are:
  • 4 ounces hazelnuts (blanched and crushed, about 1 cup)
  • 1/4 cup sesame seeds
  • 4 tablespoons butter
  • 1/4 cup olive oil
  • 3 tablespoons olive oil
  • 1 1/4 teaspoons paprika (smoked)
  • 1 teaspoon brown sugar
  • 1 1/2 teaspoons kosher salt (divided)
  • 1 teaspoon pepper
  • 3 garlic cloves
  • 4 pounds leeks (white and pale green parts only, roots trimmed and halved, quartered if very large, this is about 8-12 leeks)
  • 2 tablespoons red wine vinegar

How to Make

  • Step 1: Prepare gill for medium-low heat.

  • Step 2: In a saucepan over medium-low heat cook the first three ingredients (-butter) plus 1/4 cup oil for 7-10 minutes or until nuts are golden brown, stirring often. Remove from heat and stir in the paprika, brown sugar, 1/2 teaspoon kosher salt and 1 teaspoon pepper. Grate the garlic and add in, stir to combine. Set aside.

  • Step 3: Place the leeks in a bowl and toss with 3 tablespoons oil and 1 teaspoon kosher salt; season with pepper.

  • Step 4: Arrange leeks, cut side down, on grate. Cover and grill for 10-15 minutes (undisturbed) until charred underneath, using tongs turn leeks over and cover grill and grill for another 10-15 minutes or until charred and soft inside.

  • Step 5: Transfer leeks to platter and drizzle vinegar over top and then top with the sauce and nuts.
