Step by Step Method

Step 1

Build a medium-heat fire in a charcoal grill or heat a gas grill to medium.

Step 2

Form meat into 6 patties; season with salt and pepper.

Step 3

Heat a cast-iron skillet on grill; place patties in skillet and top with onion slices. Cover with grill lid and cook 3-5 minutes; flip burgers, resting them on top of the onion slices and cook 2 minutes more. Top with cheese slices and cook until cheese melts (a minute or two); keep warm.

Step 4

Working in batches, grill buns, lettuce, pickles and tomatoes, turning once until charred (2 minutes for buns, 3-4 for romaine, and 5-7 minutes for pickles and tomatoes), turning once until charred.

Step 5

Divide patties, vegetables and condiments between buns (or simply serve all separately and let people fix their own burgers)

These burgers came out so nice and juicy and packed with flavor. We loved the "grill everything" concept, however, I didn't grill the pickles or lettuce (used baby spinach), but grilled everything else. Loved what it did to the onions; grilling made them sweet and mellow with added smokiness from the charcoal grill as did the tomatoes; made them sweeter and smoky as well. I cut thicker slices of both the onions and tomatoes to prevent them from falling apart on the grill and falling into the grill grates, which worked perfectly. I think I will make it this way from now on this summer. My family and I loved them. Thank you, ellie, for sharing! Made it for Billboard Tag.

Very tasty - grilling the onion under the meat just adds flavour to both the onion & the patty. I put one onion slice under the tomato for grilling and added some mushrooms.. Loved the recipe. I used recipe #1217 for the romaine.
