"This was originally from a very old Crisco cook booklet. I reworked it a bit. They used Crisco instead of butter of course, I'm not. I'm using frozen peas instead of fresh."

Step by Step Method

Peas:


Step 1

Bring 1 cup water to a boil and add a teaspoonful of salt, pepper, sugar, and the dried mint to the boiling water.

Step 2

Add peas into the boiling water and cook them rapidly until they become tender.

Step 3

Drain.

Sauce:


Step 4

In a separate bowl, mix the lemon juice, butter, fresh mint and chopped parsley together.

Step 5

Stir in the Maitre d’Hotel butter sauce among the cooked peas.

Step 6

Season to taste.

Step 7

Reheat the peas gently, allowing the flavors to meld and the butter sauce to coat the peas.
