Step by Step Method

Step 1

Steam green beans until just crisp-tender, about 4 minutes.

Step 2

While the beans steam, place the oil in a small skillet with the sunflower seeds and cook, stirring, over medium heat until the seeds are golden brown. Do not overcook. Remove from heat.

Step 3

Add the garlic to the skillet. Stir well. When the seeds have cooled slightly, stir in the vinegar.

Step 4

In a large bowl, toss the beens with the seed mixture. Cool, then chill until ready to serve.

Step 5

To serve, arrange beans over a bed of spinach and garnish with chopped green onion.

Very good salad! I brought this salad to a potluck and it was enjoyed by all. I did not have tarragon vinegar so used 4 teaspoons rice vinegar and added some fresh tarragon leaves along with the spinach. Very good and healthy too! Thanks for sharing!

I love the flavor of the toasted sesame seeds in this salad. Next time I make it I'll make more dressing. I loved having it on the bed of spinach. It would also be good over other greens.
