  • 2 tablespoons unsalted sunflower seeds
  • 1 large clove garlic, peeled and minced
  • 4 teaspoons tarragon vinegar
  • 4 cups fresh spinach leaves, torn
  • 2 green onions, chopped

How to Make

  • Step 1: Steam green beans until just crisp-tender, about 4 minutes.

  • Step 2: While the beans steam, place the oil in a small skillet with the sunflower seeds and cook, stirring, over medium heat until the seeds are golden brown. Do not overcook. Remove from heat.

  • Step 3: Add the garlic to the skillet. Stir well. When the seeds have cooled slightly, stir in the vinegar.

  • Step 4: In a large bowl, toss the beens with the seed mixture. Cool, then chill until ready to serve.

  • Step 5: To serve, arrange beans over a bed of spinach and garnish with chopped green onion.
