"Totally different from Mirj's recipe (many of us know Mirj and she has a Greek Style Oven Fries)- just the same name. The soaking process on these makes them lighter and fluffier than usual oven fries."

Step by Step Method

Step 1

After you cut your fry shapes, take a mixing bowl and add some icy cold water to it and dissolve 1 tbsp. salt into that.

Step 2

Add the fries and cover with more cold water until the fries are submerged; weigh down with a heavy plate in your sink so there's no mess.

Step 3

Let them soak for about an hour, stirring themn up with your hand once or twice to make sure none of them are sticking together.

Step 4

Drain them in a colander and dry them completely in batches in a clean dish towel. You don't want them to be wet at all.

Step 5

Preheat your oven to 400F.

Step 6

Line one or two baking sheets with nonstick foil.

Step 7

Toss the fries with the seasoning then toss them again with the oil.

Step 8

Spread them in a single layer on the baking sheets, making sure they DO NOT TOUCH.

Step 9

Bake them 15 minutes, then turn the fries, rearranging so they do not touch.

Step 10

Bake another 15 minutes and toss again, this time you can put them all on the same pan and bake them for 15 more minutes or until they are golden and crisp. Don't be afraid to bake them longer if they haven't crisped up yet- if they are bigger or a little damp, they just may need more time.

Step 11

Serve hot with ketchup or garlic aioli or tzatziki sauce, whatever you prefer.
