Step by Step Method

Step 1

Cut feta cheese into 1/2 inch chunks.

Step 2

Beat eggs with water, oregano and pepper to blend.

Step 3

Melt butter and oil in a wide skillet with an oven proof handle, over low heat.

Step 4

Pour in egg mixture.

Step 5

Cook, lifting cooked portion with a wide spatula to let the uncooked eggs flow underneath, until eggs are just barely set.

Step 6

Sprinkle feta cheese evenly over eggs.

Step 7

Put under broiler for about 2 minutes, just until cheese is hot and melty.

Step 8

Sprinkle with tomatoes, parsley & olives.

Step 9

Cut into wedges to serve.
