Step 1: Cut feta cheese into 1/2 inch chunks.
Step 2: Beat eggs with water, oregano and pepper to blend.
Step 3: Melt butter and oil in a wide skillet with an oven proof handle, over low heat.
Step 4: Pour in egg mixture.
Step 5: Cook, lifting cooked portion with a wide spatula to let the uncooked eggs flow underneath, until eggs are just barely set.
Step 6: Sprinkle feta cheese evenly over eggs.
Step 7: Put under broiler for about 2 minutes, just until cheese is hot and melty.
Step 8: Sprinkle with tomatoes, parsley & olives.
Step 9: Cut into wedges to serve.
