Ingredients

The ingredients are:
  • 6 eggs
  • 3 teaspoons water
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon pepper
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 ounces feta cheese, cut up
  • 1/4 cup tomatoes, diced
  • 1/4 cup fresh parsley, chopped
  • 10 Kalamata olives, pitted and chopped

How to Make

  • Step 1: Cut feta cheese into 1/2 inch chunks.

  • Step 2: Beat eggs with water, oregano and pepper to blend.

  • Step 3: Melt butter and oil in a wide skillet with an oven proof handle, over low heat.

  • Step 4: Pour in egg mixture.

  • Step 5: Cook, lifting cooked portion with a wide spatula to let the uncooked eggs flow underneath, until eggs are just barely set.

  • Step 6: Sprinkle feta cheese evenly over eggs.

  • Step 7: Put under broiler for about 2 minutes, just until cheese is hot and melty.

  • Step 8: Sprinkle with tomatoes, parsley & olives.

  • Step 9: Cut into wedges to serve.
