"This was my Grandmas favorite recipe; and, was something she used to make all the time for us. I can't say it is a classic recipe; but, it is a family favorite."

Step by Step Method
Step 1
Orzo ... In a medium size pot, melt the butter on medium to medium high heat and add the pasta. Saute for 2-3 minutes until lightly golden brown, make sure to stir often, so the pasta does NOT burn.
Step 2
Rice ... Once the orzo has toasted, add the rice, garlic, onions, and saute another minute just to combine all the ingredients.
Step 3
Broth ... Then, add the broth, bay leaf, a pinch of both salt and pepper, and bring to a boil. Then reduce to a simmer, cover, and cook according to package directions - approximately 20-25 minutes.
Step 4
Finish ... Once all the liquid has been absorbed, remove from the heat, stir in the scallions and fresh parsley; cover and let it set 3-5 minutes.
Step 5
Serving ... Check for any additional seasoning, remove the bay leaf, and garnish with the scallion. ENJOY!
