Ingredients

The ingredients are:
  • 1/2 cup long grain white rice, rinsed
  • 1/2 cup orzo pasta
  • 1/4 cup onion, fine minced
  • 3 scallions, fine chopped (white and green parts)
  • 2 cloves garlic, minced
  • 2 cups chicken broth (unsalted preferred)
  • 2 tablespoons unsalted butter
  • 1/4 cup fresh parsley, chopped
  • 1 bay leaf
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • GARNISH
  • 1 scallion, cut in 1/2" slices on an angle (green parts only)

How to Make

  • Step 1: Orzo ... In a medium size pot, melt the butter on medium to medium high heat and add the pasta. Saute for 2-3 minutes until lightly golden brown, make sure to stir often, so the pasta does NOT burn.

  • Step 2: Rice ... Once the orzo has toasted, add the rice, garlic, onions, and saute another minute just to combine all the ingredients.

  • Step 3: Broth ... Then, add the broth, bay leaf, a pinch of both salt and pepper, and bring to a boil. Then reduce to a simmer, cover, and cook according to package directions - approximately 20-25 minutes.

  • Step 4: Finish ... Once all the liquid has been absorbed, remove from the heat, stir in the scallions and fresh parsley; cover and let it set 3-5 minutes.

  • Step 5: Serving ... Check for any additional seasoning, remove the bay leaf, and garnish with the scallion. ENJOY!
