"I wanted to pin this on Pinterest, but couldn't. So I'm posting it here. It's from eatnourishing.com. I modified it a bit. I also used muffin tins to bake them. Works great! You can use 2/3 cup coconut flour instead of what I posted."

Step by Step Method
Step 1
Preheat oven to 400 degrees. Grease a cookie sheet or muffin tin(s) (or use an ungreased pizza stone).
Step 2
Using the whisk attachment, mix together eggs, butter, salt, and garlic. Add coconut flour and baking powder and beat the batter really well until there are no lumps and the eggs have had a good beating (it sounds harsh, I know, but the key to fluffy, grain-free baked goods is thoroughly beating the eggs).
Step 3
Drop batter by big spoonfuls onto prepared sheet (or into muffin tins). Keep the biscuits plump so you can push hot dog pieces into them.
Step 4
Cut hot dogs into fourths (or breakfast sausages into halves) and push one piece in each biscuit, spreading the batter up to cover the top. Sprinkle grated cheese (or place sliced cheese) atop the pigs in the blankets.
Step 5
Bake for 15-20 minutes. Let cool for a minute.
