Golden Garlic Clouds (Popovers)
"This is from Garlic Lovers' Greatest Hits. The recipe was submitted by Jeanne Howard. I found these a bit too salty, so I recommend reducing the salt a bit. I used Herbes de Provence for the mixed herbs. You will need a jumbo muffin tin for this recipe. These won't look as if there is enough batter, but trust me, there is. Prep time is preheating time; mix the batter while the pan is heating. If the popovers are not done to your liking, add a little more baking time. I use a whisk for these, not an electric mixer. To double the recipe, double everything except the eggs; use only 3 eggs."

Step by Step Method
Step 1
Preheat oven to 450°.
Step 2
Use the shortening to grease the cups of a jumbo muffin tin.
Step 3
Place muffin tin in oven and heat until shortening begins to smoke, about 10 minutes.
Step 4
Sift flour, salt, and baking powder together. Set aside.
Step 5
Beat eggs. Beat in milk.
Step 6
Add herbs. Whisk in flour mixture.
Step 7
Remove hot tin from oven.
Step 8
Divide batter evenly among muffin cups. It won't look like there is enough, but there is.
Step 9
Bake for 20-25 minutes without opening the oven.
Step 10
Check after 20 minutes or so. If they are done enough for you, take them out. If not, bake another 5-10 minutes.
