Ingredients

The ingredients are:
  • 1 tablespoon shortening
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt, or to taste (I recommend less)
  • 1/8 teaspoon baking powder
  • 2 large eggs
  • 1/2 cup milk (whole milk preferred, but 2% works)
  • 6 cloves garlic, pressed
  • 1 teaspoon mixed herbs (I used herbes de Provence)

How to Make

  • Step 1: Preheat oven to 450°.

  • Step 2: Use the shortening to grease the cups of a jumbo muffin tin.

  • Step 3: Place muffin tin in oven and heat until shortening begins to smoke, about 10 minutes.

  • Step 4: Sift flour, salt, and baking powder together. Set aside.

  • Step 5: Beat eggs. Beat in milk.

  • Step 6: Add herbs. Whisk in flour mixture.

  • Step 7: Remove hot tin from oven.

  • Step 8: Divide batter evenly among muffin cups. It won't look like there is enough, but there is.

  • Step 9: Bake for 20-25 minutes without opening the oven.

  • Step 10: Check after 20 minutes or so. If they are done enough for you, take them out. If not, bake another 5-10 minutes.
