Step by Step Method
Step 1
Place the goji berries in a small heatprof bowl, cover with boiling water and set aside for 20 minutes to soak and then drain and squeeze out as much liquid as possible.
Step 2
Place the goji berries, almonds, coconut, chia seeds. dates.cacao and maple syrup in a food processor and process, for 4 minutes or until the mixture comes together.
Step 3
Roll tablespoons of the mixture into balls and working one at a times, dip a ball into the chocolate, allowing the excess to drip off and place on a large tray lines with non-stick baking paper and sprinkle with the pistachio.
Step 4
Place in the refrigerator for 20 minutes to set and then serve. (Should yield 28 balls.
